Photo of Joey PetersMy best food memory comes from living in a house with four other guys. Being lazy and poor, we never ate anything expensive. One day my housemate Max cooked a pound of spaghetti, but forgot that he didn’t have any pasta sauce to supplement the noodles. His only options were ‘Sri Racha’ chili sauce, summer sausage (for protein), and a block of cheddar— the last of which he grated onto his noodles. My other housemate Ethan dubbed the mix of ingredients as “speghetto,” but Max thought it was the best meal he had yet cooked on his own.

This might seem disgusting to some, but Max was a guy who once survived solely off of leftover birthday cake for a few days. This pasta dish was a nutritious meal to him. Luckily, I never sank so low. But Max’s “speghetto” meal was a reflection of the way we ate in that house— mixing anything and everything stashed in the kitchen. 

These days, I eat out more.
