15 years ago my mother was diagnosed with central cord syndrome, a rare spinal injury similar to multiple sclerosis. There wasn’t too much I could do at the time, being seven and all. But one day, nine years later, she fell asleep while boiling some water and the water evaporated before she woke up. I remember never wanting to do the dishes, or any chores for that matter, but I decided to cook for the family. Mom could take naps, and I could refine my kitchen skills. I started out with a family favorite, Swedish Meatballs, but soon expanded my territory. At the same time I had become a Food Network addict. I watched Emeril, Good Eats, Iron Chef, Malto Mario; you name it, I watched it. When I left for college and started eating dorm food, I yearned for home and cooking meals for the family. Now whenever I go home I take the reins back from dad and cook something new. Sometimes, even Mom likes it.
