For nearly my whole life, I've had an ongoing love affair with a certain dairy product— cheese. I could probably eat a whole pound of it if no one stopped me. My need for cheese began at a young age. I loved it on all sandwiches and nearly all meals. Grilled cheese was an unbeatable treat, especially if it was cut into fours with bread and butter pickles on the side and preferably made by my grandma. If I was served a meal that I didn't like, I found sprinkling a little, or a lot, of cheese on the top made it go down easier. Today, I love cheese in all of its glorious forms. Be it a hot queso dip, brie spread or the ever-popular string cheese, chances are I'm not going to share easily. The variety and versatility of cheese is simply unbeatable.
